A girl from Utah makes Doubles

One of the great things about being married to a guy from Trinidad is that you get to eat some GREAT Trini food. One of my favorites is Doubles. Doubles is a Trini street food, that consists of curried channa (chickpeas) held between two pieces of flat bread, called bara.

Mendra makes great curried channa, so it was up to me to try my hand at making bara. I found a few recipes online, and gave it a try. This is the recipe I followed, from MarkRuinsDinner.wordpress.com. The main change I made was to use half all purpose flour and half chickpea flour.

I'm pretty happy with how they turned out. I think I needed to knead the dough a bit longer, so that the bara would come out a bit smoother, and I think we need to fry them at a bit lower temperature so they're a bit less crisp. But really, for my first attempt at making doubles, I'm thrilled. Next time, I think I'll use something like this recipe that uses baking powder instead of yeast, that's how my mother-in-law makes them.
